We describe Ada’s as ‘classic with a twist’. You can indulge on what you’d expect to find in an old-world hotel lobby bar, finessed by our signature Peter Rowland touch. Our cocktail list reflects a heady mix of classics but if our guests have something in mind, our mixologists can create bespoke cocktails to order. We also offer an extensive list of non-alcoholic cocktails inspired by Seedlips’ botanical range.

Named after Ada Coleman (widely recognised as the world’s first female mixologist), who tended the bar at the Savoy in London in the early 1900s, Ada’s is the perfect place for locals and guests to meet, greet and toast their good fortune at finding the perfect example of a first-class hotel lobby cocktail bar, right here in Melbourne.

Ada was famous for her signature cocktail, the ‘Hanky Panky’ – a combination of gin, sweet vermouth and fernet branca. And yes, it features boldly on the menu matched with an impressive charcuterie board.
