Archer’s will quickly becomes known as one of the best restaurants in Docklands, delivering five star restaurant quality. In Archer’s, we drew our inspiration from the mad men world of the New York hotel restaurant, circa 1960’s, when business types dined alongside socialites. The boutique setting, emphasised by its vault like design aesthetic, demanded a destination concept, where hotel guests stayed in to eat and Melbournian’s travelled in to experience.
Archer’s menu is ‘inspired by local’ and will be delivered by Head Chef Alex Drobysz (Maze London, Lumiere Vancouver, Epocha, Bryerley) who brings Michelin star experience. This Inspired by local approach goes beyond the paddock to plate and moves further than farm to fork. We are also canvassing roof tops for honey, and laneways for artisan product. Our menu concepts are being developed around a true providore experience and inviting our producers to collaborate.
Archer’s will offer an a la carte ‘Melbourne style’ breakfast, as well as a twist on the traditional hotel buffet, with the offering presented to the table. Lunch and dinner dining will include a two and three course menu, as well as a tasting menu.
