When presented with a space on the hotels top level, featuring west facing floor to ceiling windows, we instantly knew it demanded a concept that celebrated the arriving afternoon sun, through to its nightly setting beyond the horizon. From this, Sunset House was born.

Sunset house provides a sanctuary to escape the urban sprawl, and a playground to vibe with tunes, food and drink. Its warm glow inspired the gold accents throughout the venues design and compliments the lounge furniture. We drew inspiration from the old school Beverly Hills pool houses, where ladies donned oversized glasses, large-brimmed hats and sipped champagne from saucers. The cocktail list keeps that Beverly Hills feel flowing with an extensive Spritz range that you will want to work your way through. The menu is light and colourful, designed to graze and share.

The grazing style menu is a collection of specialty dishes designed to be shared. A classy selection of finger sandwiches includes; Smoked trout, sauce gribiche, cucumber; and Chicken, tarragon, and lemon. Graze with guests on Sashimi tuna with green chilli sambal; Moreton Bay bug brioche roll; Salt and vinegar rosti with shaved wagyu and whipped roe; and McIvor Farm pork “Katsu Sando”

Keeping it local with a craft beer selection and an Everleigh range of Spritzed cocktails, that compliment the signature cocktail range that includes the Sunset Sling – Absolut Elyx, Dom Benedictine, Pineapple, Lime and Bitters; and the Elderflower Philosophy – Lillet Blanc, Marionette Orange Curacao, Dehydrated oranges, and grapefruit bitters.
