Melbourne Marriott Hotel Docklands is the Docklands first 5-star hotel, bringing an international standard of accommodation, dining and events to the rapidly expanding precinct.

The partnership sees PRG exclusively engaged to create and deliver the food and beverage operations throughout Melbourne Marriott Hotel Docklands – including the launch of 4 venues and 3 event spaces.

Ada’s

Ada’s (Lobby Bar) The best of the Melbourne bar scene meets the classic hotel lobby. Named after Ada Coleman (widely recognised as the world’s first female mixologist), who tended the bar at the Savoy in London in the early 1900s, Ada’s is the perfect place for locals and guests to meet, greet and toast their good fortune at finding the perfect example of a first-class hotel lobby cocktail bar, right here in Melbourne.

“We describe Ada’s as ‘classic with a twist.” Dhaval Soni, Food and Beverage Manager. You can indulge on what you’d expect to find in an old-world hotel lobby bar, finessed by the signature Peter Rowland touch. The cocktail list reflects a heady mix of classics but if guests have something in mind, the PRG mixologists can create bespoke cocktails to order. Ada’s  will also offer an  extensive list of non-alcoholic cocktails inspired by Seedlips’ botanical range.

Must Try Drink: Ada Coleman’s signature cocktail, the ‘Hanky Panky’ – a combination of gin, sweet vermouth and fernet branca.
Must Try Dish: Mini Great Ocean Road duck jaffles with house made parfait and plum sauce.

Archer’s

Archer’s (All Day Dining Restaurant) Start spreading the news, New York-style dining is here to stay. Drawing design inspiration from the very best New York hotel restaurants of the 1960’s, Archer’s is set to become an exciting example of destination dining for guests and Melbournians alike.

Head Chef Alex Drobysz (Maze (London), Lumiere (Vancouver), Epocha (Carlton), Byerley (Flemington Racecourse)) brings  Michelin Star experience and creativity to Archer’s menus – which are inspired by locally grown and sourced produce.

“We are going beyond paddock to plate and further than farm to fork. We are canvassing rooftops for honey, and laneways for artisan product. We are dedicated to forming deep relationships with our producers and collaborating with them to highlight the very best of the season.”

Before 11am, the stunning, modern mist-grey, all-day dining room offers a generous a la carte breakfast (inspired by the award-winning brunch menus Melbourne is internationally known for) or a unique buffet breakfast, personally presented to you, at your table. Lunch and dinner feature 2 and 3 course menus along with an ever-changing seasonal tasting menu.

Must Try Dish: Tea-smoked butterfish with candied eggplant and grenobloise sauce.
Must Try Drink: New York Penicillin 24 – local whisky, fresh lemon, house made ginger syrup, and honey-infused water made from Spirited Lot in Mornington – designed and produced specifically for this cocktail.

Sunset House

Sunset House (15th Floor Lounge Bar) A sun-lit sanctuary in the clouds where all that glitters is gold. Inspired by pool-side playtime in Palm Springs, no matter what time of the day or night you visit, it’s all about the vibe. The team at Sunset House are passionate vibe-makers – from the tunes, the light and bright food menu through to the cheeky all-day cocktail menu.

Gold design accents ensure the space practically glows whilst you work your way through the extensive Spritz-obsessed cocktail list. Peckish? We’ve got snacks specifically designed for grazing, sharing or enjoying entirely to yourself.

Featuring west-facing floor to ceiling windows, Sunset House provides the perfect vantage point to celebrate the arrival of the afternoon sun through to its nightly setting beyond the horizon. It’s a place to start the night, or end the night, or for a visit anytime in between.

Corsia

Laneway culture is the backbone to Melbourne’s world-renowned food scene. With this in mind, Corsia has been designed as a purpose-built laneway – cleverly connecting the lobby, reception, restaurant and shopping precincts, whilst highlighting the best of Melbourne’s cafe and coffee culture.

But first, coffee. We’ve partnered with Melbourne’s best roaster – St Ali – to ensure our team of baristas (who’ll be working behind a supremely stylish, custom-made sage green coffee machine) have access to the very best beans available. If you’re looking for coffee with a kick, Corsia also features an extensive Espresso Martini menu throughout breakfast, brunch and lunch service.

And now, something to eat. “Expect to find generous rows of classic pastries, filled Italian breads, and jars of freshly baked biscotti, alongside crisp-fresh salad selections rich in greens and grains.” David Albert, Executive Chef.

Must Try Drink: St Ali coffee – roasted right here in Melbourne
Must Try Snack: Our Italian-inspired dessert range including chocolate bomboloni with strawberry crème, cannoli filled with caramelised orange ricotta, and watermelon and goats milk panna cotta.
